Grilled Pork Chops with Honey Garlic and Fig Sauces

Ingredients

  • 2 pork chops, 1 3/4 inch thick
  • 1 lime, for juice
  • 1 cup honey
  • 6 cloves minced garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon ground mustard
  • 1 teaspoon black pepper
  • 1/2 cup fig preserves
  • 1 tablespoon Worcestershire sauce
  • 3/4 stick butter, for grilling
  • 1 pound fresh asparagus
  • Olive oil, for drizzling

Instructions

  1. Start by marinating the pork chops with lime juice and seasoning on both sides.
  2. Prepare the honey garlic sauce by mixing honey, minced garlic, soy sauce, ground mustard, and pepper in a bowl.
  3. For the fig sauce, combine fig preserves and Worcestershire sauce in another bowl.
  4. Preheat the grill and cook the pork chops using an indirect cooking method until they reach 145°F.
  5. Finish by searing the pork chops over a direct flame for 1-2 minutes on each side for char marks.
  6. While the chops are grilling, toss the asparagus with olive oil and grill until tender.
  7. Serve the pork chops topped with either the honey garlic sauce or fig sauce and grilled asparagus on the side.
