  • 1 tablespoon garlic powder
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 2 racks St. Louis style pork ribs
  • 1 tablespoon mustard (for binder)
  • 4 tablespoons butter
  • 2 tablespoons honey
  • 1 cup store-bought barbecue sauce
  • 3 tablespoons maple syrup
  • 2 chipotle chilies in adobo sauce (chopped)

Instructions

  1. Prepare the rub by mixing brown sugar, chipotle chili powder, smoked paprika, cumin, garlic powder, kosher salt, and black pepper in a bowl.
  2. Trim excess fat from the St. Louis style ribs and remove the membrane if desired.
  3. Coat the ribs with mustard as a binder, then apply the rub generously on both sides.
  4. Preheat the smoker to 275°F and place the ribs inside for 2 hours.
  5. After 2 hours, wrap the ribs in heavy-duty aluminum foil with butter and honey, then return them to the smoker for an additional hour.
  6. While the ribs are wrapped, prepare the barbecue sauce by combining store-bought sauce, maple syrup, brown sugar, and chopped chipotle chilies in a bowl.
  7. After an hour, unwrap the ribs, brush them with the prepared barbecue sauce, and let them cook for another 30 minutes in the smoker.
