Ingredients

  • 2 pork chops, 1.75 inches thick
  • 1 lime, juiced
  • 1 teaspoon original seasoning
  • 1 cup honey
  • 6 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon black pepper
  • 1/2 cup fig preserves
  • 2 tablespoons Worcestershire sauce
  • 1 stick butter, half melted
  • 1 bunch asparagus
  • Olive oil for grilling
  • Lemon zest for flavoring

Instructions

  1. Start by marinating the pork chops in lime juice and seasoning for at least 30 minutes.
  2. Preheat the grill using indirect heat and add oak and mesquite wood for smoke.
  3. Grill the pork chops indirectly until they reach 140°F, then sear over direct flame for color.
  4. While grilling, prepare the sauces by combining honey, minced garlic, soy sauce, ground mustard, and black pepper in one sauce, and fig preserves with Worcestershire sauce in another.
  5. In a separate pan, melt butter and mix with lemon zest for drizzling over the asparagus.
  6. Grill the asparagus until tender and slightly charred.
  7. Serve the pork chops with either honey garlic or fig sauce drizzled on top alongside the grilled asparagus.
